Makes roughly 10-12 cookies.

Ingredients

43g caster sugar

112g demerra sugar

40g flaked almonds

112g Enjoy! Delightfully Dark Bar, crushed into small pieces

205g self raising flour

20g cocoa powder

1/2 tsp bicarb

65g coconut oil

72g peanut butter

100g golden syrup

40g water

3/4 tsp salt 

Method

  • Pre-heat oven to 170C/ 150C fan/ 3 ½ gas
  • Line a suitable baking tin with baking paper
  • Put all the dry ingredients into a large baking bowl (inc. chocolate and almond flakes)
  • In a separate bowl, add the golden syrup, peanut butter, coconut oil, water and mix until it is all combined
  • Pour the syrup mix into the dry ingredients bowl and mix until it is all well combined and forming a cookie dough texture
  • Shape the mixture into balls using your hands and place them on a lined baking tray
  • Place in the oven for 12-15 minutes
  • Once baked, set aside to cool for around 10 minutes
